Somewhere on Harguin Etcheberry Street in Bidart, Dolia took her neighborhoods in a former early business. The address is discreet, but once the door is pushed, we understand immediately: here we speak wine, terroir and peasantry with passion — and with the right words.
Behind the project, a couple of professionals: Nolwenn Liberge and Vincent Etcheverry, respectively sommelier and oenologist, who have made their common dream come true here. An intimate place, in their image, dedicated to the winegrowers engaged and to the respect of the living.
A cellar that defends another way of drinking
At Dolia, there is no concession on what is in the bottle. Organic wines, biodynamics, natures: the selection is tightened but terribly well thought out, from the everyday bottle that pleases the rare allocations that are whispered between amateurs. Each label corresponds a winemaker, a history, a gesture — and it is this traceability that guides all the choices of the house.
The idea is simple: to bring French crafts and peasantry to the service of taste. No marketing, no filling. Just wines that make sense.
More than a cellar, a peasant grocery store
Dolia, it's also an organic and farm grocery store. There are cheeses, charcuteries, dry products, canned foods and little finds of the moment — all from artisans and producers who share the same ethics as the cellar. What to compose is an aperitif, a picnic or a whole meal without ever coming out of the spirit of the place.
Good advice at the right time
Dolia's other strength is counsel. Whether you arrive in known territory or you are completely novice, Nolwenn and Vincent take the time. They will direct you to the right winemaker, the good cuvée for what you plan to eat tonight, or the bottle that will surprise your guests. All in a warm atmosphere where you will gladly take five more minutes to talk wine.
Close to Biarritz, between the ocean and the mountains, Dolia has become in a few months one of the beautiful addresses of the Basque Coast for who loves to drink good, fair, and well accompanied.
