In the heart of Cambo-les-Bains, just opposite the town hall, Aléa Kafé opened its doors at the end of March 2025. Behind the project, two teenage friends from rugby: Léo Carrère, former physical preparer of the Olympic Biarritz, and Iban Hiriart-Urruty, a US Dax player. It was through their international meetings on the grounds that they discovered specialty coffee — and their common passion was born. After a serious training in the trade, the two companions placed their suitcases in Cambo to open a boutique-torrefaction as we see few in the Basque Country. What exactly is specialty coffee? Aléa's idea is not to compromise quality. Specialty coffee refers to coffees evaluated according to the standards of the Specialty Coffee Association (SCA): beans are rated in 100, and only those that exceed 80 points fall into this category of exception. Globally, this represents less than 5% of production. Suffice it to say that every grain that passes through Aléa Kafé has been carefully chosen.An artisanal roasting, made on site every weekIn the heart of the shop is the drum roasting machine — a real nerve center of the place. Leo and Iban select their green grains from producers engaged in emblematic regions: Brazil, Ethiopia, Colombia, Indonesia, Kenya... Every week, they roast their coffees themselves, playing on the profiles (light, medium, dark) to bring out the best of each origin.
