Rue Jean Mouton, in Anglet, Constance Courgenay and Quentin Lapierre opened in the spring of 2024 Ressources, a short grocery circuit with a small restaurant to take away.
The project was born of a simple and demanding conviction: better is a local grocery store that really defends its producers than a big brand that speaks well about it.
A duet with tailor-made skills.
Before placing their cartons in Anglet, Quentin spent seven years at the head of Épiceries Humphris in Paris, where he became a fine connoisseur of the French farmer sourcing: passionate about the peasant world, a trained cheesemaker, he surrounded himself with the best producers to grow the concept of grocery at the recognized bakery. Constance, she's in the stove.
And it is precisely this complementary grocer-cooker that makes the salt of Resources.
90% of products within 100 km
The commitment is clear, quantified and maintained: 90% of the products offered are sourcing within a radius of about 100 km around the grocery store.
Everything goes on:
- Fresh, organic and seasonal fruits and vegetables
- Crémerie and cheese factory (speciality of Quentin)
- Meat from local producers
- Farm meats (including Kintoa pig)
- Breads made in partnership with Fagoa
- Dry groceries selected for their sense and quality
- Cave: a nice selection of South West wines
Organic and seasonal farming is preferred within each radius. And behind every product, there is a real support approach: to make the farms of the territory live, to give visibility to farmers, to defend local food sovereignty.
The anti-gaspi lunch.
It's one of the smartest biases in the place.
Rather than throwing the unsold out of the cool radius at the end of the day, Constance cooks them to propose a menu of dishes to take away at lunch, renewed every day according to arrivals. Tartes, quiches, lasagna, couscous, soups in winter, salads in summer, always less than 10 €, and always a vegetarian option.
For aperitifs and gourmet breaks, charcuterie-fromage boards complete the proposal.
A virtuous logic from end to end: zero waste, fair price, just product.
A careful framework, clear values
The grocery store took its neighbourhoods in a famous old chocolate and pastry shop in the neighborhood, to which Constance and Quentin gave their mark.
The welcome is warm, we feel that here we are willing to talk about what we sell, where it comes from, how it cooks.
