In Urrugne, rue Jean Fourcade, the Boucherie Chez Paulette was revived in June 2024 under the impetus of Paul Thuilleaux. The name remained — a nod to the local customers who had been calling the old business for a long time — and the spirit also: a butcher shop of proximity, serious, generous, where one knows the provenance of what one sells.
Just 29 years old at the time of recovery, Paul embodies this new generation of passionate butchers who choose crafts rather than the big surface. And who are eager to give back his letters of nobility to a job that is often mistreated.
Butchery, charcuterie, catering : everything on site
At Paulette we find the essentials and much more:

A selection of carefully processed meats — beef, veal, lamb, pig, poultry
A homemade charcuterie that makes the part beautiful to the Basque tradition (country ham, sausage, terrines, boudins, pâtés...)

Like many engaged merchants of the Basque Country, Chez Paulette accepts the eusko, the local currency of the territory. A simple but important sign: here we are part of a local economy, we work with local farmers and artisans, and we take on choices that make sense.

What brings people back is also the council. Paul takes the time: the cooking that goes well with this piece, the accompaniment to anticipate, the quantity just for the number of guests.
